The festive season is here, and we all know what comes next – a summer filled with social catchups, days by the beach and for some of us; many a cocktail!
To ensure you’re getting to enjoy the pick of Newcastle’s cocktails, we’ve got chatting to the wonderful people behind our city’s top bars and restaurants to find out the very best cocktail offerings over summer. So, without further ado here is Newcastle’s best summer cocktail guide.
One of my personal favourite venues across Newcastle made the exciting decision to change things up prior to corona – a dedicated Italian menu. The always buzzing Basement on Market St is constantly updating their cocktail menus and this summer is no different. Check out the top three recommendations from the staff themselves!
One of their signatures, Limoncello Sorbita is like an Italian Summer in a glass. Made with vodka, Licor 43, mint, and house-made limoncello sorbet.
A summer newbie that exudes class and style. The flavours of vodka, vanilla essence, and passionfruit are delicately balanced making this one of our favourite fruit delights.
Green apples and martinis – is there a more iconic duo? This Appletini is a perfect balance of sweet and sour with fresh green apple juice, vanilla vodka, apple liqueur, frothy egg whites, and sugar syrup.
The dark and sophisticated venue on Hunter St has been bringing its always evolving beverage list to Newcastle since its inception in 2014. Unsurprisingly, Chris and the team behind the bar have seeped out some goodies in the lead-up to their summer menu launch.
Made with Herradura Plata Tequila, Cynar, lime juice, palm sugar, Peychaud's bitters and topped with Umesha and black salt foam.
The brains behind Newcastle’s original tiki bar and self-proclaimed rum enthusiasts, Byron & Prudence of Blue Kahunas are continuing their tropical getaway vibes with their Saucy Melons cocktail.
Complete with a blend of Caribbean white rum and Haitian Rum, orange herbal liqueur, watermelon juice, sage tincture and finished with lemon juice.
The Lake Mac entertainment precinct, Dullboys Social Co is also home to one of the best-kept cocktail secrets; Barcadia. Within the walls sits the retro-inspired Barcadia with cocktails taking you back to those childhood gaming heroes.
Hadouken Fire Fist
A trio of dark, white and spiced rum, passionfruit puree, grenadine, cranberry, pineapple, and lime juice served with a fiery surprise.
Just like the princess herself, this cocktail is pretty in pink! Made with vodka, peach puree, cloudy apple juice, lime juice, and fairy floss to finish!
The 1920’s inspired bar and restaurant comes out swinging this Summer with a brand-new creation and one of their all-time summer favourite cocktails to share with you.
Barrel-Aged Blood Orange Old Fashioned
Suntory Toki (Japanese whiskey) and blood orange barred aged in-house for six weeks.
Sunset Gin & Grapefruit Spritz
Adelaide Hills 78 degrees Sunset Gin, grapefruit liqueur, grapefruit juice, lemon juice, sugar syrup, egg white and topped with soda water.
The sophisticated Asian inspired cocktail bar and restaurant are known for their sweet and coconut flavoured cocktails with lots of lychees and lemongrass and five-spice spirits.

Wickham's fine dining restaurant might be big on food, but their sprawling deck is calling for you to enjoy a summer afternoon cocktail.

The Parry St venue has become a place that we all know and love for both its food and drink offerings and they haven’t fallen short this year with some summer cocktail favs to choose from! To get you in the summer cocktail spirit, head in for happy hour between 4pm-8pm Mon-Sat for their $10 cocktails! With the Espresso Martini's and Margarita's being a crowd favourite!
Just up the road and you’ll find yourself at the grungy grown-up playground that is Parry St Garage. Explore their dedicated range of Spritz’, their Collection and Sipper cocktails, or their summer cocktail special, Bambina!

This cocktail lounge and tapas bar is tucked away just off the shores of Newcastle Beach making it the best spot to enjoy a cocktail on a warm summer afternoon. The bartenders enjoy a challenge and love nothing more than putting together bespoke drinks for those indecisive bar-goers, but this summer, their number one suggestion is the Horatio Cornblower.

We all know and love the iconic venue that is Merewether Surfhouse. Those views just can’t be beaten and when you’re sitting upstairs in the child-free cocktail lounge with their summer cocktail in hand, you really just can’t complain!

One of Newcastle’s newbies for 2020, The Rum Diary Bar has been successfully getting locals in to come and check out their insane interiors and relax in their very own cigar lounge. The bar is home to over 200 varieties of rum, hailing from Spanish, French, and English styles as well as the Rum Diary house-spiced rum. Which brings us to their signature cocktail, the famous Dark and Stormy!
