Six seafood courses with matching cocktails
Nagisa and The Koutetsu are joining forces for TK Seafood Fest, a one-night-only seafood and cocktail collaboration created for Newcastle Tuna & Seafood Festival.
On Tuesday, 29 July, The Koutetsu will host a playful six-course seafood menu matched with Koutetsu-style cocktails.
For one night only, Chris Schofield from Nagisa and Chris Wilson from The Koutetsu are coming together for an intimate festival dinner that puts premium seafood front and centre.

Created especially for Newcastle Tuna & Seafood Festival, TK Seafood Fest will bring Japanese flavours, bold bar snacks, and creative cocktails together across six courses.
Expect bluefin tuna, lobster, salmon caviar, squid ink, shokupan, and a few unexpected twists woven throughout the menu.
Each course will be matched with cocktails, making this a seafood dinner with a distinctly Koutetsu edge.
Seats are limited, and this one is expected to book out.
Seafood Trail Dish
Koutetsu is serving Tuna Cocktail..., created by Chris “Wilso” Wilson.
The cocktail features Maidenii Kina, Unico Rosa vermouth, Four Pillars x The Kyoto Distillery Changing Seasons Gin, and champagne syrup, carbonated and finished with a wasabi oil garnish, bringing together botanical, sparkling, savoury, and subtly spicy flavours.

Newcastle Tuna Fest returns in 2026 bringing a bigger, bolder celebration of seafood, local restaurants, and the city’s coastal dining identity. Launching on Sunday, June 28, with the Grand Opening Event, Newcastle Tuna Fest continues throughout July with the festival centring around the Newcastle Seafood Trail, with around 30 participating venues across Newcastle each creating a signature tuna or seafood dish.
