Hear from the owners behind Newcastle’s 2024 Bar of the Year

Situated in the heart of Newcastle East sits The Falcon Bar & Restaurant – a vibrant hub of community and culture and the winner of Newcastle’s inaugural Bar Awards, Bar of the Year award.

Infused with the passion and personality of its owners, Mike Galvin, Brendhan Bennison, and Sven Barnard, The Falcon has become a strong presence in our local hospitality scene since its inception in 2018. Cementing itself in the east end, The Falcon has become known for its warm atmosphere, creative menu, and the genuine hospitality that defines it.

The trio each have long histories in the hospitality industry, but it was Mike and Brendhan’s shared experiences in Sydney that laid the foundation for a partnership that would eventually bring the two to Newcastle.

Opening The Falcon was a leap of faith for Mike and Brendhan, but one they felt compelled to take. The location in Newcastle  East was particularly appealing to them offering a unique charm and community that resonated with their vision.

“It is such a beautiful spot, and we felt that no one was doing this concept in the east end,” Mike said.

From the moment you step into The Falcon, it’s clear that this is no ordinary bar.

“We designed it as if you were coming to our house for food and drinks. We have adorned the walls with photos and art that represent us and our way of life. We play good music, serve great food, and try to make everyone feel at home,” Brendhan said.

The menu at The Falcon reflects Mike and Brendhan’s culinary journey, with dishes that have quickly become local favourites. The Cheese Burger, Pacific St. Jambalaya, and The Schnitt are amongst the top picks on the menu.

“Although we’re not known as a BBQ joint, I think that’s what really separates our flavours from anywhere else. We smoke our briskets, chicken, sausage, and more over seasoned pecan wood. It’s become our signature.”

This dedication to flavour and quality is what sets The Falcon apart, making it a must-visit for the true foodies of Newcastle.

Having taken home the coveted Bar of the Year award at Newcastle’s inaugural Bar Awards, of course it’s no surprise to hear that the drinks are as top-tier as the food.

“Sven and the bar team are constantly coming up with epic cocktails. The Cactus Garden is a gem, but I’d say they make one of the best margaritas and Bloody Marys this side of Uluru.”

As they look to the future, The Falcon team plan to continue focusing on providing a great experience for everyone who walks through their doors, all whilst expanding their offering for you to experience a taste of The Falcon from home.

“We’ll be bottling our BBQ sauces, hot sauces, and adding our smokey BBQ beef jerky and other little treats to our shelves.”

Additionally, the crew plan to launch a take-home BBQ menu this spring, allowing customers to cater their parties or events with The Falcon’s signature flavours.

“Thanks to all that come through, we don’t take anyone for granted. Big love to all our staff past and present – you guys make it amazing.”

The Falcon wouldn’t be out of place as a stop on an American road trip, yet this Newcastle East bar feels fundamentally Novocastrian. The Falcon harmonises approachable, moreish cocktails, beers, and wines, with a menu of Southern-inspired dishes that turn first-timers into regulars. So, when will you be visiting?
