A New York-inspired Italian fusion late night venue opens on Darby Street

This New York-inspired Italian fusion restaurant and late-night bar is the concept of Thomas Lawson, whose journey to bring MIINE to life is one built on industry experience, and an undeniable passion for creating unforgettable dining experiences.

For Thomas, MIINE is not only a restaurant but an experience-driven space where food, drinks, and atmosphere converge. Thomas, affectionately known as Tompy, has been a familiar face in the Newcastle hospitality scene for years.

With all this experience, Thomas wanted to put it to good use, with the mission being to bring an exciting, eclectic venue together that would capture both local and international influences while catering to Newcastle’s evolving dining scene.

Inspired by the creative energy of New York dining, MIINE leans heavily into a distinctive artistic aesthetic. The walls feature bold, eye-catching graffiti reminiscent of street art, with the intent to change and evolve throughout their time on Darby Street.

“We’d love to get artists in to refresh the walls periodically. We want people to sit down and go, woah what’s that,” Thomas said.

Beyond the striking interiors MIINE’s focus is on creating an atmosphere where guests can enjoy delicious food, creative cocktails, and a memorable night out.

The menu has been crafted to reflect a blend of Italian and Mediterranean influences without being strictly Italian. The experience at MIINE is intentionally undefinable – an approach that allows the team the flexibility to surprise diners on every visit.

The drinks program, led by bar manager Beaux, brings a similar inventive spirit to MIINE. With a background in some of Sydney’s top bars, Beaux has crafted a cocktail list that’s as visually appealing as it is delicious.

Using a range of culinary techniques, they’re creating one-of-a-kind drinks, including a sous-vide banana gomme for one of their signature cocktails.

“We’re using a lot of kitchen techniques in the bar. It’s such a clever way to get creative in the bar and it’s allowed us to create a lot of bespoke and signature cocktails.”

The drinks menu, like the food, will rotate seasonally, encouraging guests to come back to try new flavours as the months go by.

As for the ambiance, MIINE hits the sweet spot between a relaxing dining venue and a lively late-night destination. Open Wednesday through Sunday, with plans to expand to seven days by the end of the year, MIINE transforms from a laid-back spot during the early evening into a vibrant space as the night progresses.

“I’d love to see people, one hand in the air with a slice of pizza just vibing to the music,” Pete said.

With a rotating DJ lineup on weekend, MIINE aims to cultivate an atmosphere that’s welcoming to a wide range of guests – from young professionals for an after-work drink and nibble to those looking for a high-energy late-night experience without having to venture into the club scene.

The best part about dropping into MIINE? The kitchen is open until close with a dedicated late-night eats menu.

“Ultimately, I wanted MIINE to be the place where everyone feels welcome; the team know your name and they know your drink!”

Set to be the first venue of its kind in Newcastle, MIINE will combine the warmth of a neighbourhood pub with the sophistication of high-end dining.
