Love anything sweet and loaded with flavour? You best get moving and experience the delectable New York-style loaded cookies at Marshall & Daughters at their new location in the heart of Newcastle’s CBD.  

Brought to you by Newcastle-born and bred couple, Nathan and Mel, Marshall & Daughters was a creation born from the pandemic and has surprisingly blossomed since their inception in 2021.

With a background in the travel industry, the local couple was twiddling their thumbs come the first lockdowns after having to halt operations with their travel company, SoundMart Tours. Being big lovers of the iconic New York-style loaded cookies and baking them for friends and family since 2008, the idea for Marshall & Daughters started brewing.

“When the pandemic hit, we had to hibernate and we couldn’t operate our travel business so we thought, what are we going to do? Then we just thought, why not try to sell these cookies? That’s where the idea came from.

“We needed to pivot and do something else. We initially started as just something positive to do really because we were spending so much time at home. We started making them with the girls, and one day decided to make a website and social media pages and start selling them online,” Nathan shared.

Kicking off online in May 2021, the business quickly took off with orders quickly being placed from Melbourne, Brisbane, and even Darwin.

“We never expected it to get as big as it has. We literally were just looking for something positive to do during the pandemic.”

Quickly outgrowing their at-home baking station, the couple, alongside their two daughters decided it was time to move Marshall & Daughters into a dedicated baking spot. Moving into 160 Maitland Road in Mayfield and opening their café experience in November 2021.

Fast forward to today and the cookie-crazed business has expanded once more moving its dedicated shopfront right into the heart of Newcastle’s CBD on Crown Street.

“We were really just running out of room so we decided to keep Mayfield as just a bakery only.”

Opening up the fresh space in January this year, Marshall & Daughters not only continue to deliver their OTT cookie flavours, but have added something a little exciting to the menu, ice-cream sandwiches!

“We always intended to do the ice cream sandwiches from day one, we just didn’t have the space. When we came in here, we wanted it to be similar to Mayfield with that New York-y vibe, but then be able to display cookies like this. You can see everything; our cookies, ice cream, the ice cream sandwiches, and even our cereal bar.”

Whilst each cookie is created with different flavour profiles, you can rest assured knowing you’ll still get to experience an authentic NYC-style loaded cookie; these guys are the Newcastle-based cookie specialists!

In addition to their cookies, you can also get your hands on and your mouths around a handful of savoury goods with bagels supplied by Papa’s Bagel Bar as well as coffee with beans from Glitch Coffee Roasters

The name, Marshall & Daughters, is a nod to the couple’s memories of creating their signature loaded cookies, which the recipe has been perfected alongside their two daughters, Phoenix and Peyton.

“Our two daughters have always loved our cookies and throughout their childhood, we have spent countless hours making them together as a family in numerous different forms, perfecting the recipe through trial and error and enjoying them together.

“This is why when it was time to choose a name, we thought it only right that we choose the name Marshall & Daughters as they have been such an important part of the process.”

For the Mayfield locals, don’t get too down, as the pair have plans to look at reopening the space as a grab-n-go style offering in the near future. Watch this space!
