Make this iconic dish at home in line with International Dumpling Day

With International Dumpling Day just around the corner (yes there is indeed a day dedicated to the gloriousness of dumplings) we caught up with the incredibly talented team at Light Years Asian Diner to get the lowdown on how to create their very own Mushroom & Ginger Wontons at home.

This year, International Dumpling Day lands on Monday, the 26th of September, so why not make the most of the Mondayitis and make your very own dumplings at home with this step-by-step guide to recreate Light Years Asian Diner’s Mushroom & Ginger Wonton.

Ingredients

Wonton wrappers
Dipping sauce
Coriander bunch
250g fresh shitake mushrooms (halved and sliced)
250g button mushrooms (halved and sliced)
1 Spanish onion
40g garlic
60g grated fresh ginger
50g water chestnut
Soy sauce, salt, and pepper to taste

Method

Finely chop the onion and garlic before frying in a pan with a little bit of oil until fragrant. Add the sliced mushrooms, add a splash of water to get the shrooms cooking, turn down the heat and slowly cook out all the moisture out of the mushrooms for about 30 minutes. Check seasoning then fold through the grated ginger and finely chopped chestnut before refrigerating.

Folding Method

Place a tablespoon of the mushroom mixture in the middle of a wonton skin. Wet the edges and fold to the best of your abilities.

The Best Dumpling Dipping Sauce EVER

Ingredients

10g dried chilli flakes
100ml vegetable oil
100g chopped garlic
20g sliced coriander stalks (keep leaves for garnish)
250ml black vinegar
100ml sesame oil
300ml soy sauce
100g sugar
150g white toasted sesame seeds

Method

Fry the sliced garlic, chilli flakes, and coriander stalks in the oil until fragrant. Add the rest of the wet ingredients and simmer for 10 minutes. Add sesame seeds and chill.

Dish Assembly

Boil the dumplings in a large pot of water for three minutes before draining and serving with the dipping sauce and some coriander leaves sprinkled on top.
