Old coyote chaos comes to Parry Street
148 Parry Street has long been one of Newcastle’s go-to hospitality addresses, and whilst the offering has altered in recent years, its latest chapter feels not only more settled, but significantly more grown up.

The opening of Papalote in December 2025 showed what can happen when three of Newcastle’s most respected (and awarded) operators join forces.
Now co-owned by Stephanie Wells and her partner Michael Portley (Humbug), alongside Eduardo Molina (Flotilla), Papalote arrived with a bang - Mexican in name and flavour, this confident new addition to Newcastle’s already vibrant dining landscape continues to draw the crowds.

When we spoke to Eduardo at Papalote’s opening night, he hinted that an adjoining bar would soon follow.
True to his word, February 2026 welcomed COYOTE into the family: a function space + cantina accessed via Eddie’s Lane (or through Papalote for those already dining).

COYOTE is its own unique energy - “Papalote’s cheeky nephew,” as the team describes it, built for celebration first, and casual cantina hangs when functions aren’t booked.

The room will feel familiar to anyone who remembers The Edwards era: lofty ceilings, a generous bar, and an open-plan ease. Add to it COYOTE’s nostalgia-and-mischief energy and you’ve got a space that’s all about getting social and settling in.

The pool table draws a crowd, while classic Coyote and Road Runner cartoons and flashes of lucha libre roll across the projector, the kind of mischief that inspired the name, as Steph explains.
“In Aztec mythology, Huehuecóyotl (“Old Coyote”) is the god of music, dance, and beautiful chaos, a trickster who thrives on celebration. The name also nods to mezcal, where “maguey coyote” is used in some regions for rare wild agaves prized for complex flavour.”

When it’s operating as a cantina (Thursday to Saturday from 3pm until late; check socials for function-related changes), the bar snack list keeps things punchy.

Morita-spiced nuts, chicharrón, chilaquiles in salsa roja, kingfish ceviche with clamato, barbacoa tacos, mushroom pibil tacos, and a hot dog ‘con todo’ (or go the Sonora version, bacon-wrapped).

COYOTE also makes for the ideal function space, hosting cocktail-style celebrations of up to 70 guests, with canapé packages designed to be passed, shared, and paired with margaritas - think totopos and salsa roja, queso fundido, fruit with tajín, ceviche, flautas con mole, barbacoa tacos, and more.
