Romantic accommodation in the heart of the Hunter Valley
Spicers Guesthouse in the heart of Hunter Valley’s wine region, first opened in 1984 by Pepper’s before Salter Brothers Hospitality launched Spicers Guesthouse in late 2018.

In the heart of Hunter Valley wine country, Spicers Guesthouse and its on-site restaurant, éRemo, offer a grounded yet refined take on luxury, hospitality, and indulgence.
Set among native bushland and vine-covered hills, this peaceful estate is a true retreat – one that invites you to settle in, slow down, and savour the beauty of simplicity done well.

From the moment you arrive at Spicers Guesthouse, there’s an unmistakable sense of ease.
The sandstone walls and open fireplaces, sculptured gardens and vine-draped pergolas create a tranquil, timeless atmosphere.

Whether you're here for romance, relaxation, or the rich tapestry of wine country experiences on offer, Spicers makes it easy to do everything, or nothing at all.
Across 45 thoughtfully appointed rooms and a separate four-bedroom cottage, interiors lean into a natural palette of timber, stone and soft whites, accented by inky tones and gentle, earthy colours.

Ground floor rooms open onto terraces and gardens, while upstairs suites offer expansive views over the property and surrounding bushland. Whether you’re planning a romantic weekend, a solo escape, or time with friends, each room is designed to provide comfort, calm, and a sense of welcome retreat.
The property’s layout and design reflect its intention: a quiet, spacious retreat that encourages rest, connection, and ease.
The main guest lounge, framed by soft lighting and warmed by a stone fireplace, is a beautiful space to gather before dinner or settle in with a glass of local red. Outside, the grounds are just as considered – from the vine-covered pergolas to the open lawns and swimming pool, every detail invites you to pause and take in the moment.

Just steps away from your rooms, éRemo restaurant elevates the entire experience with a culinary offering that’s both generous and refined.

A celebration of Italian tradition with a modern Australian touch, éRemo delivers the kind of meal you want to stretch out and savour.
The Avido menu – named after the Italian word for ‘greedy’ – is a bold and heartfelt expression of flavour, where whole duck, venison, root vegetables, hand-cut pastas, and seasonal seafood appear in dishes rich with soul. Gorgonzola, fig jam, truffles, and heirloom tomatoes make regular appearances, paying homage to the robust, expressive ingredients Italy is known for.
The kitchen takes inspiration from across Italy but isn’t bound by region or rule. Instead, dishes are guided by seasonality and spontaneity, thanks to close ties with local producers and a kitchen that values quality above all else.

Complementing the menu is a wine list that shines a spotlight on the Hunter’s best, alongside acclaimed labels from regions such as the Adelaide Hills, Margaret River, and Yarra Valley. There’s also a considered selection of Italian and French wines, offering guests the option to explore the familiar or venture into something new.

Together, Spicers Guesthouse and éRemo create a destination that’s immersive, intimate and utterly unforced. It’s where thoughtful hospitality meets elegant design and inspired dining – a place to reconnect with the things that matter most.
