This winter, take yourself on a mini escape to the Mediterranean with Bannisters Port Stephens latest pop-up restaurant, Toli’s.

Following Julio’s departure, which left us a little broken hearted, the kitchen team have been working hard to fill the void, and have nailed the brief with a Mediterranean feast.

Located poolside within the Bannisters Terrace Bar, Toli’s menu is all about seasonally inspired ingredients, warm wintery textures and exotic Mediterranean flavours all of which giving you that dining by the Aegean Sea kind of feeling, all winter long.

To fully appreciate the mix of flavours start your feasting experience with a freshly baked yoghurt bread then get ripping and dipping through the assortment of flavoursome dips.

The menu covers all the classics including zaatar,  whipped taramasalata with herbs and smoked salmon caviar, burnt eggplant with garlic, lemon and pomegranate seeds, beetroot dip with hazelnuts and goats curd. Or if you're like us, it's hummus all the way.

For something a little more substantial, scan to the share and mezze plate offerings which include crispy duck cigars with sour cherry sauce, burrata with orange, kohlrabi and coriander, and chargrilled lamb kebab with onion and sumac salad.

If we're talking Mediterranean menus of course roasted falafals and tahini feature as do one of our go-to's, the griddled haloumi with burnt honey, thyme and nuts.

Seafood is always a priority of the Bannisters team and they haven't disappointed us with the roasted scallops with harissa and rose being a must order.

The drinks list is equally as dreamy with six Mediterranean-inspired cocktails making decisions difficult. Of course one has to try the Turkish Delight. For something bubbly the pomegranate fizz with Pizzini Prosecco and Pama Liquor bring the summer vibes when the chill has settled in outside.

Officially launching on June 4th, and open seven nights a week, be sure to arrive a little early with happy hour and bar snacks running between 3 - 5 pm.
