The Orange-based gin distillery Aviary is officially opened
A visit out to the central west region of Orange isn’t complete without a visit to the newest gem to open up in town; Parrot Gin Distilling.
Founded in 2018, Parrot Gin Distilling is brought to you by a passionate team. The Orange-based venue is home to a diverse range of gins and the newly opened Aviary; gin tasting bar.
You can now book in for your very own Gin Tasting Experience and sample the distillery’s amazing collection; dry, distinct, and handcrafted right in the heart of Orange.
“Our gin now becoming a reality meant it was time to pay homage to all previous gins and distillers and put not only our spin on a modern Australian gin but also showcase the region we are based in – Orange, NSW. Orange is recognised for its volcanic soils and rich fruit and wine, so naturally, we wanted to combine the two.”
Currently, the Orange-based brand has seven separate gin flavour profiles; no doubt with more in the works. Starting with a revamped classic Dry Gin, made using 17 botanicals with hints of apple, vanilla, and mixed herbs; all driven by the core ingredient, juniper.
Up next is the Foragers Blend, created with 14 locally foraged botanicals with an earthy, herbal and slight citrus twist. The Foragers Blend is for the serious gin enthusiasts. The Uncaged OP Gin is a bold, gallant style gin at 54% alcohol with subtle tones of grapefruit, mandarin, and a delicate trace of cinnamon.
The Parrot Firebird packs a punch with spices of cinnamon mingled with sweet yet spicy aromatics. For those wanting something a little sweeter, the Red Silk is created with hibiscus as the dominant flavour combined with real organic fruit pieces including rosehip, strawberry, and apple.
The Earl Grey gin is exactly what you might expect. Using quality components that complement, not overwhelm each other for a perfect balance of flavour. The team’s most recent creation, the Oriental is infused with lemongrass complemented by the subtle tingle of chilli and scents of lime, pears, and Vietnamese mint.

You can book in for a visit to the newest venue to open in Orange, NSW, and choose from one of three tasting experiences sure to ruffle your feathers. Beginners can sample three of the team’s classics for $25, for the Lovers you can sample three of the classics and enjoy a take-home bottle of Parrot Gin for $100. For the Gin Extraordinaire’s, sample three of the classics and take home two bottles of Parrot Gin for $150. All tastings include a gin + tonic to enjoy in Parrot Distilling’s Aviary afterward.
The Aviary itself is set in a converted warehouse space in the back streets of Orange. The hidden gem is sure to bring some exciting vibes and flavours to the always booming food and drink scene in town.
Complete with neon signage, an open distillery space, custom wooden bar front, and tasting boards; there’s a lot to love about The Aviary.
The team behind the booming brand is Founder Ben Cochrane, Master Distillery David Rees and the brains behind operations, Madeline Herft. The trio makes all the magic happen right here in the Orange venue.
