When you’re surrounded by some of the best produce and chefs in the country it makes perfect sense to create a restaurant space that takes full advantage of all the flavours, passion of the growers and the skills of the chefs.
Which is where Bolton Street's newest foodie venture, The Residency, comes into the picture.
The Residency collaborative kitchen is bringing to Newcastle a menu loaded with the regions, sourced within 100km of Newcastle, best ingredients from the farmers who want to get a little more familiar with their produce and story.
So whilst sourcing local produce isn’t a new thing by any means, where The Residency differs from the rest is that the team also plan on collaborating with a collective of chefs, handing over their kitchen and providing all aspiring chefs the opportunity to get a feel for restaurant life.
The Residency will be open for breakfast and lunch with the menu being a humble all-day offering of some classic and twisted café dishes using the best of produce/products available; bread from Bacco’s, ham and bacon from Branxton Quality Meat, Just Been Laid free range eggs, cheese from Hunter Belle Dairy and butter and cream from Udder Farm, the Hunter’s last independent dairy farm. There are no gimmicks only fresh and delightful ingredients.
With coffee from one of our local favourites, Glitch and milk from Udder farm, it’s the perfect day-time location.
This is where things get interesting.
In the evening, The Residency transforms into a hub of opportunity and creativity with the space being open to chefs to either move out of the food truck or from behind the market stall into a working kitchen and restaurant space.
The first resident chef is Tuba Sokemn, originally from Turkey offering an array of Turkish mezze. Until the end of October, Tuba is cooking a six dish classic Turkish banquet to be shared and enjoyed with Hunter-only wine and beer or Turkish Raki.
With regional Chinese, home-cooked style Italian, Modern Persian and American BBQ in the pipeline best to keep in touch and follow The Residency's every move.
It’s all about the collaboration with chefs of all varieties. From the professional established chef, to private caterers, amateur cooks or the young newly-qualified, The Residency is all about giving them a podium to showcase their skills and love of cooking.
