Rich and smokey, the miso-based broth is topped with wood ear mushrooms (kikurage), garlic shoots, shallots, black garlic, and of course, the marinated egg on top.
The hero of the dish is undoubtedly the tender sticky miso pork rib! For those of you who love their meat flavorsome and fall from the bone kind of tenderness you're going to wish the chilly month of June never comes to an end.
