The Clyde Street Arts Precinct is buzzing as Newcastle’s largest collective of collaborative makers and artists are busy at work.
But who’s fuelling the creativity behind these passionate locals? Meet Piratti Bakery, a Fino-Italian bakery run by duo Tim Evans and Niamh Bellicanta.

Walking down the precinct alley toward the bakery shed, surrounded by lush greenery, you instantly feel a spark of creative energy.
Cosy corners are filled with vintage antiques, a small stage is decorated with well-loved instruments, and the adjacent courtyard houses the bakery’s oven, fully operated from a brightly coloured custom-built trailer, shaded by a thriving herb garden.

There’s even a repurposed van powering the bakery’s barista setup, tucked neatly into the yard.
Every element of Piratti Bakery’s space feels intentional, contributing to a shared vision: a hub where Newcastle’s creative community can gather, connect, and collaborate.

You might recognise Piratti from its earlier days on Bolton and King Street back in 2021. What began as a sourdough workshop, with friends pitching in, gradually evolved into a full bakery operation. After some time off, Tim and Niamh have revived Piratti with a fresh vision.

Their approach is thoughtful and intentional, favouring slow, sustainable processes and organic growth driven by loyal customers and a trusty street sign. What Piratti is building goes beyond a baked-goods haven; it’s a hub rooted in connection, centred on a shared passion for creativity and local food.

What they’re DisHhing up
Piratti offers an array of Fino-Italian baked goods, all centred around a meticulous four-day fermentation process. At the heart of it all is a living sourdough culture, over a century old, passed down through generations and carried across oceans.

Constantly evolving with its environment, the team has even cross-bred the culture with Masa Madre to create their signature sourdough pizza base.
Inspired by the duo’s heritage, the menu blends Finnish and Italian influences. Scandinavian-style cinnamon scrolls alongside Italian focaccia, an unexpected but harmonious pairing that reflects both tradition and creativity.

The bakery places strong emphasis on local, seasonal produce and minimising waste. Ingredients are sourced from local growers and even their in-house bakery garden, making their jams, chutneys, and baked goods taste as fresh as possible. Seasonal, house-made preserves have never tasted better!

Finnish cinnamon scrolls
The fan favourite, soft, fluffy scrolls made using traditional Finnish techniques. A subtle hint of cardamom elevates the cinnamon sugar filling, creating a perfectly balanced sweetness that pairs beautifully with a morning coffee or afternoon cuppa.
Plaited loaves
Made from the same dough as the scrolls, this Finnish sweet white bread recipe (passed down through Tim’s family) is delicately plaited into a golden, symmetrical masterpiece. Lightly dusted with sugar, it offers a crisp crust and irresistibly soft interior.

Bagels with nigella seeds
A returning favourite from Piratti’s earlier days, these sourdough bagels are soft, fragrant, and slightly savoury thanks to the nigella seeds. For the full experience, try the bagels filled with Piratti’s lush bacon-and-egg roll, topped with fresh herbs and finished with a seasonal house chutney.
Italian focaccia
This soft, versatile flatbread is topped with olive oil, sea salt, and herbs picked metres from the oven. Try it as a “sambo”, layered with mozzarella, basil, tomato, and salami for a simple yet flavourful bite.
Sourdough loaves
Crafted using a slow Italian fermentation process, these loaves produce a thick crust with a delicate aroma. Options range from olive to fig and almond, with the jalapeño cheddar loaf claiming the fan favourite title, offering just the right balance of spice and richness.

What’s next for Piratti Bakery?
The duo is continuing to expand the space, recently launching a new backyard patio. Tim and Niamh are focused on growing their community offerings, with plans to host more regular pizza nights and open mics, knowledge-sharing workshops, and gatherings centred around sustainable food practices.
