The unique pop-up restaurants launches its next instalment

DONDA isn’t just another pop-up restaurant – it’s a story, a journey, and a reflection of its creator, Niah, or Noodles, as he’s better known.

Nestled within Bolton Street Pantry in Newcastle’s CBD, this intimate and ever-evolving dining experience has brought a new kind of energy to the city’s food scene. 

“It’s loud. It’s messy. It’s built for sharing.”

Originally from Thailand, Niah moved to Australia at the age of eight, experiencing a nomadic childhood that took him from Toowoomba to Cairns. Growing up surrounded by different cultures, his culinary perspective was shaped by a rich tapestry of flavors and traditions. 

That influence is evident in DONDA – each pop-up is a new chapter and a fresh experience.

Niah’s journey in hospitality has been anything but conventional. A key player in Newcastle’s dining scene, he was part of the opening team for Light Years Asian Diner and worked as a consultant for the launches of a number of venues in the area. But DONDA? That’s his own.

The idea came about in the most spontaneous of ways – over a morning coffee.

“I came into Bolton Street Pantry one morning and asked John [the owner] if they were opening nights,” Niah said.

One conversation led to another, and before long, DONDA was born. The pop-up took over Bolton Street Pantry after hours, transforming the cafe into a buzzing Italian dining experience. The first iteration launched quietly in late 2024, but word spread fast, and it quickly gained a devoted following.

But here’s the twist: you won’t find a menu online. DONDA keeps its offering under wraps until you arrive, creating an air of mystery around what’s being served. It’s part of the adventure—trusting the team, embracing the unknown, and surrendering to the moment.

More than just food, DONDA is an experience – the space is small, the wine fridge is stocked, and the energy is palpable. With each pop-up operating in ‘episodes,’ Niah, John, and their teams have the freedom to reset and return with something fresh.

DONDA runs Friday to Saturday, and bookings are essential. Because if Newcastle foodies have learned anything, it’s that when Noodles is cooking, you don’t want to miss out.
