A Sweet Ride Called ClydeTo be honest we don’t really know why, but on a recent visit to the kitchen of Stacey Cleaver’s A Sweet Ride Called Clyde, we experienced just that!A Sweet Ride Called Clyde

Stacey’s bespoke collection of hand-made pastries are simply divine. From the delightful Lemon Meringue and Salted Caramel Tart to the Choc-Hazelnut and Orange Gateaux, those fluffy Mini Macarons and morish Chocolate Fudge Brownies, they all had me oohing and aahing.

As we sit down to the smorgasbord of sweets Stacey chats about patisserie life and how it all began whilst working at Sydney’s Bistro Moncur.

“I did part of my apprenticeship at Bistro Moncur and it was here that I started working in the pastry section and I just fell in love with it, I haven’t looked back, it’s like something just clicked.”

At the completion of her apprenticeship, Stacey headed to the UK where she found herself working in the pastry section of a two Michelin star restaurant amongst a collection of other high-end restaurants throughout her eight year stint abroad.

“After my apprenticeship, I was really burnt out, with the long hours and pressure of the kitchen, I had kind of lost my passion. Moving to the UK was exactly what I needed. It reignited my love of pastries and I learnt so much, techniques I had never seen before, the whole experience was amazing.”

 

 

 

Stacey has now returned home, thankfully to Nelson Bay, where her time is now spent creating what she loves most. Currently stocked at The Little Nel Cafe and Three Monkeys on Darby Street, you can also order Stacey’s full collection of sweets and breakfast treats of Poached Pears, Muesli and Friands via her website and have your order very conveniently delivered to your front door.
