Opening just before Christmas in 2017 by John Elsley and his family under The Good Folk Group banner, the venue has consistently evolved to meet the changing tastes and expectations of its patrons.

With its approachable yet refined atmosphere, The Whistler continues to be a destination for casual dining, a fun night out, or a leisurely breakfast.

The Whistler (no ski resort story here, just a fun name) has become synonymous with quality and community. Recently, the team decided to take their offering to the next level by launching a dedicated breakfast menu and refining their lunch and dinner offerings.

“We have seen people's tastes and expectations continue to rise in the Maitland area and wanted to lift our game and bring in a more refined menu for each service. We wanted to remain approachable for casual dining and a fun night out,” John said.

The breakfast menu has already been quite the hit with early risers, with standout dishes like the chilli scramble and avo smash drawing rave reviews. Of course, no breakfast is complete without a quality cup of coffee. For seven years, The Whistler has partnered with Sydney’s VooDoo Coffee to create a custom blend that has become a favourite among locals.

Lunchtime brings hearty options like the Philly cheesesteak roll, while dinner is anchored by classics like the scotch fillet. Pair your meal with a drop from the revamped wine list, now showcasing grassroots wineries and the region’s finest drops. Highlights include Lucky’s Syrah Pinot Noir and Vinden Estate’s Pokolbin Blanc Verdelho.

For those who prefer craft beer or cocktails, The Whistler delivers in spades.

“We stock a heap of the Good Folk beers and have 100% independent taps which rotate from breweries around the country. Our favourite cocktail would be the Pisco & Pomegranate Sour.

Looking ahead, The Whistler shows no signs of slowing down. Big plans are on the horizon, including a revamp of the function room and an expansion of the coffee space to provide more indoor seating near the coffee window.
